Ingredients

  • One 15-ounce can navy beans or pinto beans 

  • 1 cup cooked or canned sweet potatoes, mashed

  • 1/2 cup plus 3 tablespoons packed light brown sugar, divided

  • 2 eggs 

  • 2 tablespoons butter or margarine, melted

  • 1/2 cup fat-free milk 

  • 1 teaspoon baking powder 

  • 1 1/2 teaspoons pumpkin pie spice 

  • 1/8 teaspoon salt 

  • Grated rind of 1/2 orange 

  • 2-4 tablespoons pecans, chopped

 

Directions

  • Combine the beans, sweet potatoes, and eggs, and 1/2 cup of the brown sugar, in a food processor until smooth. Add the eggs, butter, milk, baking powder, pumpkin pie spice, salt, and orange rind and process until blended.

  • Add the mixture to a greased baking pan and add with the remaining 3 tablespoons of brown sugar and pecans.

  • Bake at 350�F (uncovered) for about 1 hour or until browned and puffed.
