Directions

  • Grate the zest from the lime into a small bowl. Squeeze the juice from the lime into the same bowl and set aside.

  • Put the ricotta, avocado, 3 tablespoons of the honey, lime juice, and lime zest into the bowl of a food processor. Pulse the processor 12 times. Scrape the sides, process, and repeat for about 2 minutes or until smooth. Put this mixture into the refrigerator.

  • Put the remaining 2 tablespoons of honey into a microwave-safe bowl. Microwave the honey for 10 seconds or until it is fully softened. Add the blueberries to this bowl and stir carefully until the blueberries are coated.

  • After the avocado mixture is cold, add the chopped mint and stir. Divide the blueberries and avocado mixture evenly between 4 parfait or dessert dishes so that each one has 5 layers (bottom to top is blueberries, avocado, blueberries, avocado, blueberries).
