  • In a strainer, mix the cucumber, onion, salt, and garlic. Toss to coat, then allow to stand for 20 minutes.

  • In a large skillet, heat the peanut oil over medium-high heat. Place the tomatoes, chopped peanuts, red and green jalepe�o peppers, coriander seeds, ground cumin, red pepper, cinnamon, and ground cloves into the skillet, and saut� for 5 minutes or until the tomatoes are tender. Remove the tomatoes from the skillet and allow to cool to room temperature.

  • In a medium bowl, mix the salted cucumber mixture, tomato mixture, mango, cilantro, and lime juice.

  • Toss to combine, and serve at room temperature.
