2 pounds large deveined shrimp, tails removed
2 cups brown rice
1 can diced tomatoes, 15 oz.
3 cloves garlic
1/4 teaspoon dried basil
1/4 teaspoon oregano
1/2 teaspoon lemon pepper seasoning
2 cups cooked soybeans
Boil 2 cups of water. Add the rice and soybeans and cook for 40 minutes.
In the meantime, rinse the shrimp and add the lemon pepper seasoning.
Ten minutes before the rice is done, spray a skillet with cooking spray and saut� the shrimp until pink. Add the cooked rice, tomatoes, garlic, basil, and oregano. Stir and cook for five minutes.
