Ingredients

  • 1 cup mushrooms, sliced

  • 4 cloves roasted garlic, roughly chopped

  • 1 1/2 ounces fat-free feta cheese 

  • 1 egg 

 

Directions

  • Place a nonstick skillet over medium heat. Saut� the mushrooms for 3-5 minutes or until tender. Add the garlic and stir for an additional minute.

  • Transfer the mushrooms to a deep bowl, and toss with feta cheese.

  • Using the earlier skillet, cook one egg over easy. Top the mushrooms with the egg, and serve immediately.
