2 cups plain low-fat yogurt
1 tablespoon sugar
Dash of salt
1 1/2 cups pineapple, diced
1/2 teaspoon dried mint flakes
1/4 teaspoon crushed pink peppercorns
In a small bowl, whisk the yogurt, sugar, and salt until smooth. Add the diced pineapple, and stir.
Place the yogurt dip in a serving dish, and put into the refrigerator until chilled.
Prior to serving, top with mint and peppercorns.
