  • 1 (16 ounce) package frozen cut okra 

  • Butter flavored cooking spray 

  • 1/4 cup yellow cornmeal 

  • 1/4 cup panko bread crumbs 

  • 1/4 teaspoon garlic 

  • 1/4 teaspoon salt 

  • 1/4 teaspoon ground black pepper 



  • Set the temperature of the oven to 375�F. Defrost the okra in the microwave using the correct setting on the microwave or cook on high for 8 minutes.

  • Remove any excess liquid from the okra pieces and place them on paper towels to cool for 5 minutes. Using the cooking spray, generously coat the okra.

  • In a large plastic bag, add the cornmeal, panko bread crumbs, garlic, salt, and pepper and mix. Add the okra and shake to cover it with the mixture.

  • Set a baking rack on a baking sheet. Take the okra out from the bag and place on the baking rack. Bake the okra for 15-20 minutes or until crispy and browned.
