Set the temperature of the oven to 375�F. Defrost the okra in the microwave using the correct setting on the microwave or cook on high for 8 minutes.
Remove any excess liquid from the okra pieces and place them on paper towels to cool for 5 minutes. Using the cooking spray, generously coat the okra.
In a large plastic bag, add the cornmeal, panko bread crumbs, garlic, salt, and pepper and mix. Add the okra and shake to cover it with the mixture.
Set a baking rack on a baking sheet. Take the okra out from the bag and place on the baking rack. Bake the okra for 15-20 minutes or until crispy and browned.
