Moroccan-spiced lemon dressing
Ingredients
1/4 cup lemon juice
2 tablespoons non-fat plain yogurt
1 1/2 teaspoons honey
1/4 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 cup extra-virgin olive oil
1/4 teaspoon salt
Freshly ground black pepper, to taste
Directions
In a small bowl, whisk the lemon juice, yogurt, honey, cumin, cinnamon, and ginger until well blended. While continuing to whisk, slowly pour in the oil. Season with salt and pepper.
Use the dressing to top leafy green or grain salads.
