  • 1/4 cup fresh lemon juice 

  • 1/4�cup fresh mint, chopped

  • 1 1/4 cup olive oil 

  • 1/4�cup red wine vinegar 

  • 2 tablespoons lemon juice 

  • 1/2 cup fresh mint, chopped, tightly packed

  • 1 teaspoon honey 

  • 1/2 teaspoon salt 



  • To make the infusion, stir the lemon juice and mint in a small saucepan over medium heat. After it boils, remove from the heat and set aside, steeping for 10 minutes. Strain into a medium bowl. Add the remaining ingredients, whisking to mix well.
