Mini vegetable frittatas
Ingredients
5 eggs
2 tablespoons low-fat milk
1 cup diced tomatoes
2 ounces goat cheese, crumbled
2 cups chopped broccoli, fresh or frozen and thawed
Salt and black pepper, to taste
Cooking spray
Directions
Preheat the oven to 350�F.
Whisk together the eggs and milk in a bowl. Add the remaining ingredients.
Use a cooking spray to coat the muffin tins. Spoon the mixture into each slot.
Put the tins in the oven for about 15 minutes or until the eggs have set and the tops are golden.
Serve the frittatas immediately or refrigerate and reheat in the microwave (for 30 seconds) at a later time.
