Ingredients

  • 5 eggs 

  • 2 tablespoons low-fat milk 

  • 1 cup diced tomatoes 

  • 2 ounces goat cheese, crumbled

  • 2 cups chopped broccoli, fresh or frozen and thawed

  • Salt and black pepper, to taste

  • Cooking spray 

 

Directions

  • Preheat the oven to 350�F.

  • Whisk together the eggs and milk in a bowl. Add the remaining ingredients.

  • Use a cooking spray to coat the muffin tins. Spoon the mixture into each slot.

  • Put the tins in the oven for about 15 minutes or until the eggs have set and the tops are golden.

  • Serve the frittatas immediately or refrigerate and reheat in the microwave (for 30 seconds) at a later time.
