  • 1 cup cornmeal 

  • 1 cup flour 

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt 

  • 1 1/4 cups skim milk 

  • 2 large egg whites, lightly beaten



  • Preheat oven to 400�F, and spray an 8 x 8- or 9 x 9-inch pan with cooking spray and set aside.

  • In a bowl, mix the cornmeal, flour, baking powder, and salt. Add the milk and egg whites, stirring just until combined. Pour mixture into the pan and bake for 20 minutes or until a toothpick inserted in the middle comes out clean.
