Grilled cheese and portobello sandwich
Ingredients
4 small slices sourdough bread
2 large portobello mushrooms, sliced
1 red pepper, sliced
1 onion, sliced
Olive oil cooking spray
2 tablespoons Maytag blue cheese
2 slices low-fat Monterey Jack cheese
Directions
Spray a nonstick skillet with the cooking spray, and saut� the mushrooms, peppers, and onion for 2 minutes or until soft.
Once the vegetables are cooled, assemble two sandwiches by layering one slice of bread, one slice of cheese, half of the vegetable mixture, 1 tablespoon of blue cheese, and the second slice of bread. Spray the outside of the sandwich with cooking spray.
Using a nonstick skillet, grill the sandwiches over medium to high heat for 2 minutes per side or until golden brown.
