Kielbasa with tomatoes and white beans
Ingredients
1-2 tablespoon olive oil
1 lb smoked kielbasa, sliced 1/2 inch thick
1 small onion, chopped
2 cloves garlic, minced
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
One 14 1/2-ounce can peeled and diced tomatoes
One 16-ounce can navy beans, drained
Directions
Place the oil into a large skillet, and heat over medium-high heat. Add the kielbasa, and cook until lightly browned. Remove the kielbasa from the skillet using a slotted spoon.
Add the onions to the skillet, reduce the heat to medium, and cook for 3-5 minutes or until transparent.
Add the garlic and herbs, reduce the heat to low, and cook for 1 minute longer.
