  • 2 tomatoes, diced

  • 2 tablespoons fresh basil, chopped

  • 1 teaspoon fresh oregano, chopped

  • 1 tablespoon garlic, minced

  • 2 teaspoons extra-virgin olive oil 

  • Four 4-ounce halibut fillets



  • Preheat the oven to 350�F.

  • Spray a light coat of cooking spray onto a 9 x 13-inch baking pan.

  • Add the tomato, basil, oregano, and garlic to a small bowl and toss to mix. Drizzle olive oil over the tomato mixture and toss to coat evenly.

  • Place the halibut fillets onto the baking pan and top with the tomato mixture. Bake the fish and tomato mixture for approximately 10-15 minutes or until the fish becomes opaque throughout.

  • Place equal portions of the halibut and tomato salsa onto 4 dinner plates and serve immediately.
