12 large hard-boiled eggs, peeled
1/3 cup nonfat cottage cheese
1/4 cup low-fat mayonnaise
3 tablespoons fresh chives, minced
1 tablespoon sweet pickle relish
2 teaspoons yellow mustard
1/8 teaspoon salt
Paprika, for garnish
Using a sharp knife, cut the eggs in half lengthwise. Remove the yolk halves from the eggs and place 16 of the halves into a food processor. Add all the remaining ingredients except the paprika, and process until smooth.
Add approximately 2 teaspoons of yolk mixture to each empty egg half. If desired, sprinkle with paprika.
