  • 1 cup panko bread crumbs 

  • 2 tablespoons fresh parsley, chopped

  • 2 teaspoons lemon rind, grated

  • 1 teaspoon garlic, minced

  • Four 6-ounce cod fillets

  • 1 teaspoon salt 

  • 2 tablespoons butter, melted



  • Combine the bread crumbs, parsley, lemon rind, and garlic in a small bowl.

  • Place the fillets on a lightly greased wire rack in a baking pan; sprinkle evenly with the salt.

  • Spoon the bread crumb mixture evenly onto the fillets, pressing down gently. Drizzle the fillets evenly with 2 tablespoons of melted butter.

  • Bake at 400�F for 10-20 minutes or until the bread crumbs have browned and the fish flakes with a fork.
