  • Salad

    • 1 cup brown rice, cooked (1/2 c dry)

    • 1 head romaine lettuce, chopped and dried

    • 8 ounces imitation crab meat, chopped

    • 1 English (seedless) cucumber, thinly sliced

    • 1 ripe avocado, diced

    • 1 carrot, grated

    • 3 tablespoons pickled ginger, chopped

  • Dressing:

  • Garnishes:

    • 1 tablespoon sesame seeds 

    • 1 large sheet nori (seaweed), toasted and broken into small pieces



  • Combine and whisk the dressing ingredients together in a small bowl. Set aside.

  • Divide the lettuce into four dinner bowls. Add the rice on top of the lettuce.

  • Add the crab meat, avocado, cucumber, carrot and ginger to each bowl on top of the lettuce and rice.

  • Add the dressing on top of each bowl and then top with sesame seeds and nori.
