  • 2 cups white flour 

  • 3 teaspoons baking powder 

  • 5 teaspoons salt 

  • 5 teaspoons baking soda 

  • 1 cup granulated sugar 

  • 3/4 cup apricot halves, chopped

  • 1 1/2 teaspoons grated lemon zest 

  • 1/2 cup walnuts, chopped

  • 2 tablespoons unsalted butter 

  • 1 large egg 

  • 1 cup milk 



  • Preheat the oven to 350�F. Sift together the first 5 ingredients. Stir in the apricots, nuts, and lemon zest.

  • Add the wet ingredients all at once, and stir only enough to moisten. Do NOT beat.

  • Pour into a greased loaf tin and bake�for 1 hour.
