  • 1 Granny Smith apple, peeled, cored, and sliced

  • 2 tablespoons brown sugar 

  • 1 small acorn squash, about 6 inches in diameter

  • 2 teaspoons margarine 



  • Mix the apple and brown sugar in a small bowl. Set aside.

  • Pierce the squash with a fork or knife to let steam escape during cooking. Microwave on high for 5 minutes until tender, turning the squash halfway through to ensure even cooking.

  • Cut the squash in half and discard the seeds. Fill the squash with the apple mixture.

  • Microwave on high for 2 minutes, until the apples are softened.

  • Transfer the squash to a serving dish, top with margarine, and serve immediately.
