Acorn squash with apples
Ingredients
1 Granny Smith apple, peeled, cored, and sliced
2 tablespoons brown sugar
1 small acorn squash, about 6 inches in diameter
2 teaspoons margarine
Directions
Mix the apple and brown sugar in a small bowl. Set aside.
Pierce the squash with a fork or knife to let steam escape during cooking. Microwave on high for 5 minutes until tender, turning the squash halfway through to ensure even cooking.
Cut the squash in half and discard the seeds. Fill the squash with the apple mixture.
Microwave on high for 2 minutes, until the apples are softened.
Transfer the squash to a serving dish, top with margarine, and serve immediately.
