6 ounces linguine, cooked
1 1/2 cups broccoli, coarsely chopped
1/2 cup sliced carrots
2 cloves minced garlic
1 1/2 tablespoons olive oil
1/4 teaspoon dried oregano
1 1/2 teaspoons lemon zest
1/2 cup lemon juice
1/4 teaspoon basil
1/4 cup honey
1/4 cup sliced zucchini
2 seeded and diced plum tomatoes
Salt and black pepper to taste
Grated Parmesan cheese to taste
Cook the linguine according to package instructions.
Sauté the broccoli, carrots, and garlic in olive oil for about 2 minutes in a frying pan. Add the oregano, lemon zest, lemon juice, basil, honey, and zucchini and continue to cook for 6 minutes on medium to high heat.
Turn the temperature to low, add the tomatoes, and cook for another 5 minutes.
Add the vegetables to the cooked pasta and top with salt, pepper, and Parmesan cheese.
