Ingredients

  • 12 large hard-boiled eggs, peeled

  • 1/3 cup nonfat cottage cheese

  • 1/4 cup low-fat mayonnaise

  • 3 tablespoons fresh chives, minced

  • 1 tablespoon sweet pickle relish

  • 2 teaspoons yellow mustard

  • 1/8 teaspoon salt

  • Paprika, for garnish

 

Directions

  • Using a sharp knife, cut the eggs in half lengthwise. Remove the yolk halves from the eggs and place 16 of the halves into a food processor. Add all the remaining ingredients except the paprika, and process until smooth.

  • Add approximately 2 teaspoons of yolk mixture to each empty egg half. If desired, sprinkle with paprika.
