    • 1 teaspoon olive oil

    • 10 leaves baby spinach, chopped

    • 2 eggs, beaten

    • 1/4 cup tomato, chopped

    • 1 ounce crumbled feta cheese

    • Black pepper, to taste



    • Heat the olive oil in an omelet pan and add the spinach. Pour beaten eggs over the spinach and add the tomato and feta cheese.

    • When the egg is cooked, add pepper to taste, fold the omelet, and serve.
