1 cup whole-wheat flour
3/4 cup all-purpose flour, plus extra for kneading
3 tablespoons wheat germ
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3 tablespoons chilled butter, cut into small pieces
1 cup low-fat buttermilk
Preheat the oven to 400ï¿½F. Coat a baking sheet with an even layer of cooking spray.
Combine the flours, wheat germ, baking powder, baking soda, and salt together in a large bowl, and whisk to mix. Add the butter to the flour mixture and cut the butter until the mixture resembles coarse crumbs. Pour the buttermilk into the mixture, and stir until a moist dough forms, taking care not to over mix. Cover the bowl and chill for 30 minutes in the refrigerator.
Generously coat the countertop with flour. Place the dough onto the counter and knead gently until dough becomes smooth and manageable (about 6-8 times).
Press the dough into a 1/2-inch thick rectangle using a rolling pin. Dip a 1/2-inch biscuit cutter in flour, and cut out biscuits.
Place the biscuits onto the baking sheet, leaving about 1 inch in between each biscuit. Bake for 8-10 minutes or until the biscuits rise to twice their unbaked height and become golden. Serve warm.
