Place the raisins in a bowl and pour boiling water over them until just covered. Let sit for 5 minutes. Drain thoroughly, then set aside.
Heat the oil in a large skillet over medium-high heat, then add the pine nuts, and sautï¿½ until they turn golden. Add the garlic, and sautï¿½ for an additional minute. Stir in the raisins, then add the spinach leaves. Stir the ingredients until the spinach has wilted, about 1 minute.
Remove from the heat and add the lemon peel. Season with salt and pepper to taste.
