1 cup mushrooms, sliced
4 cloves roasted garlic, roughly chopped
1 1/2 ounces fat-free feta cheese
Place a nonstick skillet over medium heat. Sautï¿½ the mushrooms for 3-5 minutes or until tender. Add the garlic and stir for an additional minute.
Transfer the mushrooms to a deep bowl, and toss with feta cheese.
Using the earlier skillet, cook one egg over easy. Top the mushrooms with the egg, and serve immediately.
