Preheat the oven to 300ï¿½F (150ï¿½C). Coat a baking sheet with cooking spray.
In a large bowl, beat the egg white until foamy. Stir in the brown sugar, cinnamon, cloves, ginger, and vanilla. Add the nuts, and stir to coat. Spread evenly onto a prepared pan.
Bake for 30 minutes, stirring occasionally, or until well toasted and golden brown. Remove from the oven and cool completely. Store in an airtight container.
